Soy Bean Paste, Everything Everywhere Sauce and Soy Bean Doubanjiang - and more pretty labels to indulge the frustrated artist in me... They're all delicious, useful and hopefully will become indispensable, qualities to which I tell my children to aspire.
The rich, salty fermented taste of a good soybean paste will deepen the flavours of any braised dish without overwhelming it. Everything Everywhere is pretty self-explanatory – put it on everything and take it everywhere! Many of you will be familiar with Doubanjiang, the essential base for Mapo Tofu. DBJ is traditionally made with broad beans, but we have such good soy beans that we thought we’d try making DBJ with soy beans instead. We think it’s rather good.
